Former Denver Broncos defensive lineman Terrance 'Pot Roast' Knighton has joined the Carolina Panthers as a coaching assistant. Knighton, 34, retired from the NFL in 2017 and he's been coaching since 2019.

Knighton entered the league as a third-round pick out of Temple with the Jacksonville Jaguars in 2009. After spending the first four years of his career with the Jags, 'Pot Roast' signed with the Broncos in 2013.

He was a key player on Denver's defensive line for two seasons, totaling 61 tackles, 14 quarterback hits, five sacks, one interception and one fumble recovery in 32 games. In the third quarter of the AFC Championship Game in 2014, Knighton sacked New England Patriots quarterback Tom Brady in a 26-16 win.

After the 2014 season, Knighton signed a one-year deal with the Washington Redskins. After playing one season in Washington, he signed with the Patriots in 2016 but did not make their 53-man roster.

After retiring from football, Knighton served as a defensive line coach for two seasons at Wagner College before joining the Panthers' staff.
